Napolitan, prego!
Forza’s Neapolitan-style pizza is known for its round and airy crust edges. Everything begins with the dough. The secrets to the perfect base are Italian 00 wheat flour, carefully selected yeast and allowing the dough to rise for a good while without any rush. The process is completed with the utmost precision and care, beginning with the selection of the ingredients. The Neapolitan-style base is shaped by hand, and the pizza is baked in a hot wood-burning oven very quickly.
Roman, grazie mille!
The Roman-style rectangular pizza is crispy on the surface and airy on the inside. The ingredients and the precision of the work phases play a crucial role. The dough is allowed to rise for a long time – up to 48 hours! The long rise time and the gentle treatment of the dough ensure that the pizza base is airy. The pizza is baked in an oven at 300 °C, and always longer than its Neapolitan cousin. This creates just the right structure.
And the toppings!
The dough is extremely important – and so are the toppings! The quality and origin of the ingredients are of paramount importance to us. That’s why the tomatoes, cheeses, cold cuts, herbs and olive oils come from carefully selected Italian producers.
Our tomato sauce is always prepared without heating, as cooking would change the taste of the sauce significantly. Without cooking, the sauce retains just the right acidity.
